Tonkatsu – Deep Fried Pork

tonkatsuThis is the one of my favorite meal which my mom makes or eat at the restaurants in Japan.  It is the fried breaded sliced pork cutlets.  I’ll write how to make it at home.  I always hesitate to deep fry, because I feel it is too much work to prepare, but once I started it is not as bad as I thought and this tonkatsu is always delicious, it is worth it to cook and makes family happy!


  • slices of pork loin (about 3/4 inch to 1 inch thick)
  • salt & pepper
  • karashi : Japanese yellow mustard if you like (it gives a flavor like garlic, maybe you can use yellow mustard?!)
  • flour
  • 1 egg
  • panko prefered or bread crums
  • canola / vegetable oil for deep fry

for the sauce

  • ketchup
  • worcestershire sauce

how to make

  1. Sprinkle salt & pepper and put some karashi paste on the surface of sliced pork.
  2. Throw slices into the flour and cover with them.
  3. Dip in the mixed egg and coat each slices with it.
  4. Throw them in the Panko/bread crums, and coat one of each completely.
  5. Deep fry them in the heated vegetable oil (about 350F).  Flip over a few times till golden brown.
  6. Take out them form the oiland put on the paper towel or rack.
  7. Cut 5-7 pieces.
  8. Mix ketchup:worestershire sauce (4:1) as a sauce.
  9. Serveing with some super thin shredded cabbage under or side of tonkatsu, steamed rice and miso soup would be perfect!!!
