Ms. Barbara’s New York Style Potato Salad





  • ジャガイモ(男爵)   4~5個
  • 卵            1個
  • マヨネーズ       1/4 カップ
  • 牛乳          大匙2
  • 酢            大匙1
  • 塩・胡椒        少々
  • パセリ(fresh/dry)  少々


  1. ジャガイモを茹でて皮を剥き、食べやすい大きさに切る。
  2. 卵を硬く茹で殻を取り、好みの大きさに切る。
  3. 計量カップにマヨネース、牛乳、酢を入れ合わせておく。
  4. ジャガイモと卵を合わせたボールに塩・コショウ、パセリ、合わせておいたマヨネーズ、牛乳、酢を加えざっくりと混ぜる。
  5. 器に盛り、飾りに再びパセリを振りかけて完成。

Sponge Cake

  • eggs                          4 (200 g)
  • granulated sugar         120 g
  • flour                           100 g
  • butter                         60 g
  • corn syrup                  tablespoon 1


  1. Prepare the baking sheet with wax paper and preheat the oven 320F(160C).
  2. Mix the eggs and the sugar with a wire whisk  in a large stainless bowl until the mixture is pale yellow and put it on the stove, warm it to 100F (38C) with whisking.  Switch the wire whisk to a hand mixer, and keep whipping it until it gets thick, and tripled in volume, about 8 minutes.
  3. Heat the butter and corn syrup in a small pan to get 160 F (70C).
  4. Add the sifted flour to #2, mix briefly and add #3, mix well.
  5. Pour  #4 into the baking sheet and bake it for 25-30 minutes.
  6. Take the sponge cake out of the sheet, let it cool for a while and cover it  with the wrap to keep the moisture.

スコーン Scone

milk  250 cc
egg   1
flour 500 g
granulated sugar 50 g
baking powder 2 table spoon
butter 113 g (1 bar)
raisin  100 g
whipped cream


  1. Preheat oven to 450 F.  Place wax paper on the baking sheet.
  2. Mix milk and egg in a measuring cup, put aside.
  3. Combine flour,sugar and baking powder in a large bowl, and add cubed (refrigerated)butter, blend them well with smashing butter with your fingers.
  4. Pour milk little by little, mix them and make a dough.
  5. Turn dough out onto a lightly floured surface, knead briefly and flat it about 1 1/2 high, cut with a cutter (I don’t have a cutter so I cut off  bottom of a plastic cup and use it.  It worked great!).
  6. Put them on the prepared baking sheet and bake them 15 minutes or until golden brown.

Serve with butter, whipped cream and your favorite jam with milk tea or coffee.
